Coconut macaroons made with an easy recipe. This dessert is inexpensive, quick to prepare, and makes a nutritious snack for children, not just a sweet treat.

Ingredients

  • 2 egg whites
  • Half a cup superfine sugar
  • 1 cup shredded coconut
  • Half a small teaspoon vanilla
  • Lemon zest

Method

  1. Whisk the egg whites with the sugar, lemon zest, and vanilla until you get a creamy mixture
  2. Then add the coconut and stir with a spoon
  3. In a nonstick pan... place the mixture over medium heat, stirring constantly, until it is just heated through
  4. Leave it in the refrigerator for about an hour
  5. After an hour of chilling in the refrigerator, shape the mixture into round discs
  6. Place the discs on a tray, spaced apart
  7. Put the tray in the middle of the oven on a rack and bake the coconut macaroons at 160°C, top and bottom heat, for only 5 minutes

  8. Serve the discs at room temperature
