Coconut macaroons made with an easy recipe. This dessert is inexpensive, quick to prepare, and makes a nutritious snack for children, not just a sweet treat.
Ingredients
- 2 egg whites
- Half a cup superfine sugar
- 1 cup shredded coconut
- Half a small teaspoon vanilla
- Lemon zest
Method
- Whisk the egg whites with the sugar, lemon zest, and vanilla until you get a creamy mixture
- Then add the coconut and stir with a spoon
- In a nonstick pan... place the mixture over medium heat, stirring constantly, until it is just heated through
- Leave it in the refrigerator for about an hour
- After an hour of chilling in the refrigerator, shape the mixture into round discs
- Place the discs on a tray, spaced apart
- Put the tray in the middle of the oven on a rack and bake the coconut macaroons at 160°C, top and bottom heat, for only 5 minutesTimers: 5 min
