Delicious and Easy Blueberry Cake

- 2 1/4 cups flour
- 2/3 cup sugar
- pinch of salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons vanilla
- 1 cup milk
- 1/4 cup yogurt
- 2 cups blueberries, fresh or frozen
- 2 eggs
- 1/2 cup butter
Method

- In a large bowl, whisk flour with salt, baking powder and baking soda, and set aside.
- In another bowl, toss the blueberries with about a quarter cup of the dry mix and set aside.
- Cream the sugar and butter for several minutes, then add the eggs and vanilla and beat well. Add milk and continue beating until smooth and slightly sticky.
- Pour the sugar-butter mixture over the flour mixture and mix until just combined.
- Gently fold in the blueberries.
- Pour the batter into a baking pan lightly greased with a touch of oil or butter.
- Bake in a preheated oven at 180°C for about 45 minutes, or until the cake is done and rises, depending on your oven.Timers: 45 min
- Do not open the oven during baking. When done, let cool completely before slicing and serving with fresh fruit, coffee, and cream as desired.
