Best Homemade Sablé

Ingredients

Start here, then move straight into the method.

  • 450 grams butter at room temperature
  • 4 egg yolks
  • 1 teaspoon liquid vanilla
  • 5 cups all-purpose flour
  • 1 cup powdered (confectioners') sugar
  • 1 teaspoon baking powder
  • Jam for filling, as desired
  • Fine powdered sugar for dusting

Method

Follow the cooking sequence without leaving the page.

  1. Place the softened butter in a mixer, add the powdered sugar and beat well. Add the vanilla, then gradually add the egg yolks to the mixture.
  2. Gradually add the sifted flour and the baking powder until the dough comes together.
  3. At this stage, knead the dough by hand on a surface lightly dusted with flour.
  4. Cover the dough with plastic wrap and let it rest briefly.
  5. Roll the dough with a rolling pin on a clean surface — place plastic wrap over the dough to make rolling easier — then cut into desired shapes using sable or petit four cutters.
  6. Place the shaped cookies on a baking sheet lined with parchment paper and bake in a 180°C oven for 15 minutes only.

  7. Once the cookies have cooled, spread jam on each cookie or between two cookies and dust with powdered sugar.
