- 1/2 kilo butter
- 5 cups flour
- 2 tablespoons yeast
- 2 cups coarse semolina
- 2 tablespoons powdered milk
- 1/4 cup orange blossom water
- 1/4 cup rosewater
- 1 teaspoon mahlab
- 1/2 cup sugar
- For the filling, knead the mashed dates with a little butter and rosewater and orange blossom water.

Method
- Place butter in a mixer and cream. Gradually add the dry ingredients that are mixed together. Knead for at least ten minutes, which substitutes for manual kneading. Finally, add the rose and orange blossom waters while continuing to knead.
- For the filling, knead the mashed dates with a little butter and rose/orange blossom water.
- Shape the dough into balls to fit your wooden maamoul molds. Make a hollow in each ball, fill, seal, and shape using the molds.
- Place the date maamoul into a moderate oven until the kernels color and the dough cooks through.
