Green tortilla bread — a great recipe you can use with chicken or beef for fajitas or tacos.

Ingredients

  • 3 cups white flour
  • 1 cup cornmeal
  • 2 tablespoons powdered milk
  • 1 tablespoon salt
  • a pinch of sugar
  • 1 tablespoon baking powder
  • about 1½ cups spinach juice
  • Note:
  • If cornmeal is not available, it can be replaced with white flour

Method

  1. Rub the flours with the dry ingredients, then gradually add the spinach juice until you get a soft, cohesive dough.
  2. Divide the dough into rounds and cover with a damp cloth for about 1 hour.
    Timers: 60 min
  3. Roll each piece out until somewhat thin and cover again with the cloth.
  4. Place a non-stick griddle or pan over low heat and cook the tortillas on both sides; do not brown them—about 2 minutes total or until lightly golden.
    Timers: 2 min
  5. Cover the cooked tortillas with a cloth so they don’t harden, and store them in a bread bag.
