Zucchini with coriander and garlic is one of those super easy, practical recipes, as well as being delicious and light.

Ingredients

  • 1 kilo zucchini
  • 1 head garlic
  • 1 bunch coriander
  • 1 hot pepper pod - optional
  • 1 tablespoon sweet pepper paste or molasses
  • Olive oil and vegetable oil
  • Half a cup lemon juice

Method

  1. Put some oil (vegetable oil with olive oil, or as desired) in the pot... then stir in the chopped hot pepper, add the zucchini cut into cubes, and stir with a pinch of salt. Leave over medium heat so the zucchini does not release its juices if the heat is low.
  2. When the zucchini is cooked, add the chopped coriander, crushed garlic, and sweet pepper paste, and stir for about five minutes.
  3. Finally, drizzle the lemon juice over it and turn off the heat.
  4. Serve the zucchini with coriander and garlic hot or cold, and eat it with Arabic bread.
