Yellow mujaddara — a simple and delicious homemade recipe
Ingredients
- 2 cups yellow split lentils
- 1/2 cup Egyptian rice
- 2 medium onions
- Vegetable oil + olive oil
- Salt
- 4 cups water
- Pinch of black pepper

Method
- Rinse the lentils well, then place them in a pot with the water over medium heat
- When it boils, skim off the white foam that appears on the surface
- Remove it, add the rice, and let them simmer over low heat until cooked
- In a pan, fry the finely chopped onion in a little olive or vegetable oil
- When the onion softens and colors slightly, add it to the lentil pot with a sprinkle of black pepper and salt
- Let the yellow mujaddara simmer briefly with the onions and spices, then remove it from the heat and serve. You can also pour the mujaddara into dishes and let it cool slightly before serving
