Ingredients
- 1 cup basmati rice
- 2 cups hot chicken cooking stock
- 400 grams chicken breast
- 1 onion
- 2 garlic cloves, crushed
- 2 carrots, cut into small cubes
- 1 cup peas
- Black pepper
- Chicken stock seasoning
- Yellow saffron seasoning or turmeric
- Raisins
- Nuts as desired / cashews - pistachios
- A sprinkle of parsley for garnish
Method
- Boil the chicken with the aromatics until cooked through.
- In a pot over the heat, sauté the finely chopped onion with the crushed garlic until softened.
- Add the diced carrots and peas and sauté as well until softened.
- You can add the raisins at this stage, or leave them for garnish. Stir in the spices and salt as well.
- After a short while, add the chicken stock from the boiled chicken and let it come back to a boil before adding the washed and drained rice.
- When the stock boils and reaches the level of the rice, reduce the heat, cover the pot, and leave it for about 20 minutes until cooked.Timers: 20 min
- Fry the nuts separately with a little oil.
- Serve the yellow basmati rice on a serving platter and arrange the deboned chicken on top.
- Garnish with raisins, fried nuts, and a sprinkle of chopped parsley.
