  • 1/2 kilo peeled wheat
  • 2 tablespoons aniseed
  • 3 cups sugar, more or less to taste
  • 1 cup peeled almonds
  • 1 cup currants

Method

  1. Place the wheat in a deep bowl, cover it with water, and leave the wheat soaked overnight
  2. The next day wash the wheat well and put it in a pot with plenty of water and leave it over very low heat for about 4 hours, stirring occasionally and adding water if it runs low
  3. Continue boiling the wheat until the grains are cooked and each kernel puffs up
  4. Add the anise and sugar and continue stirring the wheat
  5. When the wheat is fully cooked and the mixture is cohesive, add raisins and peeled almonds - quantity according to taste
  6. Pour the habboubieh into cups or a wide serving bowl and garnish with grated coconut, almonds, more raisins, and a light sprinkle of finely ground anise
