Ingredients
- Zucchini
- Carrots
- Potatoes
- 5 cloves garlic, or as needed depending on the amount of vegetables
- Half a bunch fresh coriander
- 3 tablespoons vegetable oil
- Tender lamb pieces (any tender meat cut into small pieces suitable for cooking)
- 2 tablespoons tomato paste
- 1 cup water
Method
- Wash the vegetables well, then chop them
- Heat 3 tablespoons of vegetable oil in a pot over the stove, add the crushed garlic and stir, then add the chopped coriander
- When the garlic softens a little, add the meat...
- When the meat changes color, add the chopped vegetables as desired, from the firmest to the softest, stirring as you go
- Add the tomato paste and 1 cup of water, then cover the pot
- When the water comes to a boil, reduce the heat and let the vegetable stew cook gently over low heat
- Serve with vermicelli rice or plain white rice on the side
