Ingredients
- Lasagna sheets
- 1 large eggplant
- Fresh green spinach
- 1 large zucchini
- Mozzarella cheese
- Half a cup of tomato paste juice
- Oregano (wild thyme)
- Salt and pepper to taste
- White sauce (béchamel)
Method
- Lay lasagna sheets in a baking dish. You can use fresh tender lasagna, or use dried boxed lasagna by boiling and covering them, or use them directly.
- Top the lasagna sheets with a layer of roasted or fried eggplant slices (as desired), then a layer of chopped fresh green spinach.
- Also add slices of zucchini, fried or grilled. Zucchini (courgette) is preferable in this recipe to regular squash because it has no seeds and is firmer.
- Pour a little white sauce (béchamel) over the vegetables, then sprinkle some mozzarella and a little tomato paste. Add a pinch of salt and spices to taste with oregano.
- Place another layer of lasagna sheets and repeat the same vegetable layering a second time.
- Pour the white sauce with cheese over the top of the dish and bake in a preheated oven for 40 minutes.
