Curry vegetable rice with meatballs and cream — a very rich recipe we recommend trying.
Ingredients
- 1 medium onion, finely chopped
- 3 grated carrots
- 1 can or 1 cup sliced mushrooms
- 2 cups basmati rice, soaked for 30 minutes, rinsed and drained
- 2 crushed tomatoes
- 1 teaspoon turmeric
- 1 tablespoon curry powder
- 1/2 teaspoon dried coriander
- A pinch of cloves and cinnamon
- 1 teaspoon biryani spice mix
- Salt
- Meatballs:
- 500 g finely ground beef
- 1 small finely chopped onion
- A pinch of cinnamon
- 1/2 teaspoon ground cumin
- Kofta seasoning
- Masala spices for the meat, to taste or as available
- *Masala spices are whole spices that are roasted and ground finely; ready-made mixes are also available.
- Onion wedges
- 1 can cooking cream
- or
- Thick cream (qamar) mixed with a little water
- 1 tablespoon mustard
- Black pepper

Method
- Start by preparing the rice. Fry the onion in a little oil until softened, then add the carrot and mushrooms and stir.
- Add the grated tomato and stir.
- Add turmeric (yellow spice), curry, dried coriander, cloves, biryani spice and salt, and stir.
- Add the rice and water according to the type of rice — usually every cup of basmati rice needs two cups of water.
- When the water boils and is about level with the rice, cover the pot and leave it on low heat for about 20 minutes.
- Meanwhile prepare the meatballs: mix the finely minced meat with cinnamon, cumin, kofta spice, masala and finely chopped onion; knead or mix well.
- Shape the meat into small balls.
- In a pan, fry an onion cut into wedges in oil until softened, then add the meatballs and cook over low heat until done.
- When the meat is cooked, add the cream, mustard, black pepper and salt to taste and let it simmer until it thickens.
