- Dough:
- 3 cups sifted all-purpose flour
- A pinch of salt
- 3 tablespoons sugar
- 1/4 cup vegetable oil
- 2 tablespoons powdered milk
- 1 cup warm water
- 1 teaspoon instant yeast
- Philadelphia filling:
- 500 g beef fillet
- 1 teaspoon salt
- 1/2 cup red vinegar
- 1/2 cup vegetable oil
- 1/4 cup soy sauce
- 1 teaspoon Francesco spice
- 1 teaspoon Philadelphia spice
- 1 teaspoon ground red pepper or paprika
- 1 teaspoon garlic powder
- Bell peppers or to taste
- 1 onion
- 1 cup mushrooms, sliced
- Mozzarella cheese
- Philadelphia sauce:
- 3 tablespoons mayonnaise, mixed with a pinch of wild thyme, oregano, and a pinch of pepper
Method
- Mix the dough ingredients first. You will get a slightly soft dough. Let it rest for two hours.
- Cut the vegetables into thick pieces similar in size to the meat. Mix the vegetables and meat with the various spices and let them marinate for at least one hour.
- You can also leave the meat to marinate in the seasoning the night before cooking to achieve stronger and tastier flavors.
- Place the seasoned meat in a pan over low heat, then increase to high until it browns. When the meat is cooked, remove it from the heat and set aside.
- After the dough has proofed, spread the dough in the pan, place the meat on top, then sprinkle mozzarella cheese and add another layer of dough.
- Brush the surface of the dough with egg with a pinch of salt and sprinkle nigella (black seed) and sesame if desired. Put the pan in a preheated oven and bake until the dough is cooked and browned.
- Serve the Philadelphia pie with Philadelphia sauce.

- 3 tablespoons mayonnaise, mix it with a pinch of oregano and a pinch of seasoning.
