Ingredients

  • 1/3 cup butter
  • 1/2 cup vegetable oil
  • 1 tablespoon sugar
  • 1 tablespoon instant yeast
  • 1 cup warm milk
  • 1/2 teaspoon salt
  • 1 cup tahini
  • 1 cup sugar
  • 2 tablespoons toasted sesame seeds
  • 4 cups flour
  • 1 egg

Method

  1. Put the yeast, one tablespoon of sugar, and warm milk in a deep bowl, mix well, and let them rest until the mixture rises, about 10 minutes.
  2. Add the flour and egg to the yeast mixture, then the butter and oil, and mix well... add the salt as well and continue kneading, then cover with kitchen plastic wrap and let it rest for about 45 minutes.
  3. Mix 1 cup tahini with 1 cup sugar in a bowl, divide the dough into two portions and roll each with a rolling pin until thin; brush with the tahini-and-sugar mixture... make a small hole in the center of the dough and start rolling it until it forms a circle, cut it in half and roll it into a spiral as shown in the accompanying image... then brush the top of each piece with milk and sprinkle with toasted sesame seeds and let the rolls rise a second time for 15 minutes, then place the tray of rolls in a preheated oven at 180°C.
