Ingredients
- 4 cups flour
- 1/2 cup oil
- A pinch of salt
- 1 tablespoon sugar
- 1 tablespoon yeast, or no yeast - optional
- 1 cup water, or as needed
- Spinach filling:
- Finely or medium chopped spinach
- Lemon juice to taste
- Salt
- Vegetable oil
- Sumac
- Chopped onion
- Chopped tomato

Method
- Mix the dry ingredients together... then add the water gradually and knead for at least 10 minutesTimers: 10 min
- Let the dough rest for at least 2 hoursTimers: 120 min
- Meanwhile, prepare the spinach filling... chop the spinach, wash it well, and drain it
- Once it has drained well, add the chopped onion, chopped tomato, lemon juice, sumac, salt, and oil, and mix
- Keep the filling in the fridge until the dough has risen
- Before rolling out the dough and shaping the pies, drain the filling in a strainer so the pies won't open if the filling is too wet
- Roll out the dough and cut it into circles of the desired size, fill and seal as desired or shape into triangles
- Bake in a hot oven until cooked through and nicely colored on the bottom and top
