- 1 onion
- 2 tablespoons olive oil
- Half a bunch fresh cilantro
- 4 cloves garlic, crushed

Method
- Wash the fresh spinach well, then pour boiling water over it.
- Place the spinach in a colander to drain, then immediately pour cold water over it so it retains its beautiful green color.
- Squeeze the spinach leaves well to remove all the water.
- Sauté the chopped onion in olive oil; when the onion is cooked, add the chopped cilantro and garlic.
- Place the squeezed spinach leaves on a serving plate and top with the sautéed onion, cilantro, and garlic.
- Garnish as desired with lemon slices, walnuts, and pomegranate seeds.
