Special Fruit Tart — a reliably successful recipe

Ingredients

  • 4 cups all-purpose flour
  • 1 cup cold butter, cut into small cubes
  • 2 egg yolks
  • 1 tablespoon powdered sugar
  • A pinch of salt
  • 6 tablespoons ice-cold water
  • Cream:
  • Half a can sweetened condensed milk (Nestlé)
  • 2 cups milk
  • 3 tablespoons cornstarch
  • 1 tablespoon custard powder (or substitute with 1 tablespoon cornstarch)
  • 1 egg yolk
  • A pinch of vanilla powder or 1 teaspoon vanilla extract
  • Lemon zest — optional
  • Assorted fruits for decorating the tart

Method

  1. Begin by placing the cold butter cubes in a bowl, add the egg yolks, and rub together with your fingertips.
  2. Gradually add the flour, powdered sugar, and salt, continuing to mix with your fingertips — do not knead. Mix until the mixture is uniform.
  3. If the dough holds together, there is no need to add water. If it does not, add 1 tablespoon of water and mix; add another tablespoon if necessary, until you have a cohesive dough.
  4. Wrap the dough and chill it in the refrigerator for half an hour.
  5. Prepare the cream: put all the cream ingredients in a saucepan and stir well.
  6. Place over medium heat, stirring continuously until the mixture thickens.
  7. Remove from the heat and cover the surface with plastic wrap to prevent a skin from forming.
  8. Roll out the tart dough with a rolling pin until you have a thin sheet.
  9. Transfer the dough to a tart pan and shape any remaining dough into a small tart if you have leftover.
  10. Dock the tart base with a fork so it won't rise during baking, or place parchment paper over the dough in the pan and add some baking beans on top.
  11. Bake on the middle rack at 180°C for 25 minutes or until golden.
    Timers: 25 min
  12. Remove the tart and let it cool, then spread the cream over the tart and decorate with fruit.
  13. Chill the fruit tart in the refrigerator before serving.
