Small white bean stew — a classic, even better when prepared the right way
Ingredients
- 1 cup small white beans, soaked in lukewarm water with 1/2 teaspoon baking soda overnight
- Beef, cut into cooking cubes
- 2 tablespoons butter
- 1 head of garlic
- Half a bunch of fresh cilantro
- Tomato sauce or tomato paste

Method
- After soaking the beans overnight, rinse them, add hot water to cover, put them on the heat, and let them boil until tender.
- Put the meat in another pot and stir it until it dries and changes color, then add the butter, crushed garlic, and chopped coriander and sauté them briefly without letting them brown.
- Cover them with hot water, add the sauce, and simmer the meat until cooked.
- When the meat is cooked, add the boiled beans to it and let them boil together for 10 minutes.
- Serve the small white bean stew with fluffy rice and toasted vermicelli.
