Ingredients

  • Shrimp (prawns)
  • Mixed lettuce
  • Avocado
  • Cucumber
  • Arugula (rocket)
  • Black pepper
  • Paprika or sweet red pepper powder
  • Salt
  • Dressing:
  • Lemon juice
  • Olive oil
  • Dijon mustard
  • Garlic
  • Salt
  • Black pepper

Method

  1. Grill the shrimp in a hot nonstick skillet without adding oil; we want the shrimp to release all their liquids and take on a grilled flavor.
  2. Sprinkle a little black pepper and paprika over them while cooking; leave the salt for later.
  3. Let the shrimp cool before adding them to the salad.
  4. Remove the avocado pit, scoop out the flesh with a spoon, and slice it.
  5. Chop the rest of the vegetables and arrange them with the avocado slices on a salad serving plate.
  6. Arrange the shrimp on top.
  7. Whisk all the dressing ingredients together, making the garlic very mild, in a separate bowl.
  8. Drizzle the dressing over the shrimp and avocado salad and serve.
