Sha'ibiat
A very easy recipe for a delicious dessert. Sha'ibiat is one of the popular sweets especially well known during the holy month of Ramadan, but it is delicious any time of year.

- Phyllo dough or ready-made baklava sheets
- 1 tablespoon vegetable oil
- 1 cup butter
- Ashta (clotted cream)
- Sugar syrup
- Ashta:
- 1 cup milk
- 1 tablespoon cornstarch
- 1 tablespoon sugar
- 1 teaspoon rose water
- 1 teaspoon orange blossom water
- How to prepare the ashta:

- 2 cups sugar
- 1 cup water
- 1 tablespoon lemon juice

- Melt the oil and butter... Lay out the first sheet of phyllo and brush it with the butter-and-oil mixture, then place a second sheet on top and brush it with the mixture as well. Continue layering about 12 sheets of phyllo dough, brushing each sheet with the oil and butter mixture.
- Cut the oiled and buttered phyllo sheets into squares. Place a little ashta filling in each square and fold the square from its sides into a triangle.
- Arrange the sha'ibiat pieces in an oven tray. Put the tray in a preheated oven at 400 degrees for only a short time, just until the dough is browned on both sides.
- Remove the sha'ibiat from the oven and pour the syrup over them immediately.

Method
- Place the milk, cornstarch, and sugar over low heat. Stir the mixture well and make sure it does not form lumps. When it starts to thicken, add the orange blossom water and rose water.
- Place the sugar and water over medium heat until the sugar dissolves completely. When the syrup starts to thicken, add the orange blossom water and rose water.
