Ingredients
- 4 eggs
- 1 teaspoon vanilla
- 1 cup sugar
- A pinch of salt
- 1 tablespoon vinegar
- 1 cup oil
- 1 cup orange juice
- 1 cup fine semolina
- 2 cups flour
- 3 teaspoons baking powder
- For soaking the cake:

Method
- Beat the eggs with a hand or electric mixer together with 1 teaspoon vanilla, the sugar, a pinch of salt, and 1 tablespoon vinegar.
- Beat well until the mixture is pale and has doubled in volume.
- Add the oil and beat, then add the orange juice and beat again.
- Add the semolina and beat, then begin adding the sifted flour gradually along with the baking powder, continuing to beat until fully combined.
- Pour the batter into a pan greased with oil and dusted with flour.
- Place the semolina and flour cake pan in a preheated oven and set it on the rack.
- Bake at 180°C for about 40 minutes from the bottom and about 5 minutes from the top so it browns — watch closely, as oven strength varies.Timers: 40 min, 5 min
- Remove the pan from the oven and let it cool slightly before spooning the orange juice over it to soak.
- When it has cooled completely, top the semolina and flour cake with shredded coconut and serve.
