Semolina and Flour Cake — have you tried it before? You might be surprised, but we recommend giving it a try yourself.

4 eggs

1 teaspoon vanilla

1 cup sugar

A pinch of salt

1 tablespoon vinegar

1 cup oil

1 cup orange juice

1 cup fine semolina

2 cups flour

3 teaspoons baking powder

For soaking the cake:

1 cup orange juice

For decoration:

Shredded coconut

Beat the eggs with a hand or electric mixer together with 1 teaspoon vanilla, the sugar, a pinch of salt, and 1 tablespoon vinegar.
Beat well until the mixture is pale and has doubled in volume.
Add the oil and beat, then add the orange juice and beat again.
Add the semolina and beat, then begin adding the sifted flour gradually along with the baking powder, continuing to beat until fully combined.
Pour the batter into a pan greased with oil and dusted with flour.
Place the semolina and flour cake pan in a preheated oven and set it on the rack.
Bake at 180°C for about 40 minutes from the bottom and about 5 minutes from the top so it browns — watch closely, as oven strength varies.
Remove the pan from the oven and let it cool slightly before spooning the orange juice over it to soak.
When it has cooled completely, top the semolina and flour cake with shredded coconut and serve.
