Ingredients

  • 4 eggs
  • 1 teaspoon vinegar
  • 2 tablespoons baking powder
  • 2 cups flour
  • 1/2 cup vegetable oil
  • 1/4 cup olive oil
  • 1 cup fresh thyme, washed, or 1 cup dried thyme, soaked and well squeezed
  • 1 tablespoon chopped fresh mint
  • 1 cup white cheese, cut into cubes
  • 1/2 cup chopped black and green olives
  • 1 cup yogurt

Method

  1. Beat the eggs well with one tablespoon of vinegar until the mixture turns white, then add the oil and mix well
  2. Add the olives, cheese, thyme, and mint and stir with a spoon
  3. Sift the flour with the baking powder and add them too, mixing well
  4. Finally add the yogurt and stir the mixture with a spoon until combined
  5. Prepare the pan: grease it with oil and dust with flour, then pour the savory cake batter into it
  6. Let the batter rest in the pan for a quarter of an hour
  7. Meanwhile, preheat the oven
  8. Put the pan in the oven, reduce the temperature, and bake the savory cake at medium heat for 45 minutes or until a knife inserted in the center comes out clean

  9. When the cake is done, let it cool slightly then turn it out onto a platter and serve
