Authentic Baalbek-style safiha made at home from A to Z! Give it a try

Ingredients

  • 4 cups flour
  • 1 cup lukewarm water
  • 1/2 teaspoon instant yeast
  • 1 egg
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 3 tablespoons vegetable oil
  • 2 tablespoons yogurt
  • Meat filling:
  • 1/2 kilo ground meat
  • 1/4 green bell pepper, finely chopped
  • 1/4 red bell pepper, finely chopped
  • 2 teaspoons labneh or yogurt
  • 1 medium onion, finely chopped
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon paprika or ground red pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons salt

Method

  1. In a bowl, place the flour and salt and stir them lightly
  2. Make a well in half the flour mixture and add the yeast, sugar and half the lukewarm water, stir a little, then cover and leave for 5 minutes until the yeast reacts
  3. In another small bowl, put the remaining water with the egg, yogurt and oil and mix well
  4. Add the egg mixture to the dough and begin kneading the two mixtures until you have a single soft mass
  5. Place the dough in an oiled bowl, brush the surface with oil, cover it and let it rise for one hour
  6. Meat filling:
  7. 1/2 kilo ground meat
  8. 1/4 green bell pepper, finely chopped
  9. 1/4 red bell pepper, finely chopped
  10. 2 teaspoons labneh or yogurt
  11. 1 medium onion, finely chopped
  12. 1/2 teaspoon ground coriander
  13. 1/2 teaspoon paprika or ground red pepper
  14. 1/4 teaspoon ground cumin
  15. 1/4 teaspoon ground cinnamon
  16. 2 teaspoons salt
  17. Mix all the ingredients together and start shaping the Baalbek safiha
  18. Divide the dough into balls and roll them out on a table or flat surface, then roll them with a rolling pin after sprinkling with flour so they don't stick
  19. Cut the dough into circles then place in each circle the amount of one tablespoon of the meat filling
  20. Using your fingertips, pinch the edges of the dough to bring together the four corners
  21. Brush the oven tray with one tablespoon of vegetable oil and place the safiha pieces on it, then bake them in a preheated oven at 180°C
  22. When the safiha turns a light golden color, remove them from the oven
