Method
- After washing the chicken pieces well, boil them with aromatics until cooked—do not overboil so the meat does not fall off the bone, since they will go into the oven in the second stage.
- Arrange the chicken pieces in a Pyrex or baking tray and pour the chicken cooking broth over them with a pinch of salt and seven-spice blend.
- Put the Pyrex into the oven at high temperature on the top rack; when the broth boils add crushed or mashed garlic over the chicken and let them boil again for a short while.
- Add lemon juice and previously fried potato slices, distributing them over the surface.
- Leave the chicken with the potatoes in the oven for a few additional minutes until more broth evaporates, then serve with rice or Arabic bread.
