- Rice

Method
- Fry the chicken pieces in a little olive oil until browned.
- Add the spices and salt, then remove the chicken from the pan.
- In the same pan, sauté the onion until softened, then add the tomato and stir.
- Add the remaining vegetables — sliced carrot, peas, and boiled or canned corn — and stir.
- Add the pre-made chicken broth according to the amount the rice will need.
- When the broth boils, add the rice and wait for the broth to return to a boil.
- Reduce the heat, cover the pot, and leave it on low heat long enough for the rice to cook.
- Spoon the vegetable rice onto a serving dish and arrange the browned chicken pieces on top.
- Garnish the rice with vegetables and chicken with fried nuts.
- Serve this dish with salad.
