  • 2 cups white flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 tablespoon instant yeast
  • 2 1/2 cups water
  • a pinch of salt

  • 8 tablespoons cornstarch
  • 1 teaspoon rose water and orange blossom water
  • How to prepare the ashta:

  • 1 cup water
  • 1 tablespoon lemon juice
  • How to prepare the syrup:

Method

  1. Mix all the ingredients well in a bowl.
  2. Let the batter rise for 2 hours.
    Timers: 120 min
  3. Heat a nonstick pan and pour a little of the batter in medium-sized circles into the pan. When the circles are cooked and browned from the bottom, remove them and arrange them on a dry cloth or tray to cool completely.
  4. Decorate the qatayef with ground pistachios and lemon blossom, and pour the cold syrup over them.
  5. Place the ingredients over medium heat until they boil. When the mixture boils, reduce the heat and stir until you have a fairly thick mixture. Set the ashta aside and let it cool before using it as a filling for the qatayef.
  6. Place the sugar and water over the heat until the mixture boils. When it boils, add the rose water and orange blossom water and wait a few minutes. Add the lemon juice, then turn off the heat when it becomes somewhat thick.
