- 3 cups sifted all-purpose flour
- 6 eggs
- 1 cup pineapple juice
- 1/4 cup oil
- 1/2 cup sugar for the cake batter
- 1 1/2 cups sugar for the caramel
- Pinch of salt
- 1 teaspoon vanilla extract
- 2 tablespoons baking powder
- 1 tablespoon white vinegar

Method
- Whisk the eggs well with the vanilla and 1 tablespoon of vinegar until you obtain a thick foam. Add the sugar while continuing to whisk. Then add the remaining liquids and whisk, and add the flour with a pinch of salt and baking powder in batches.
- Sugar for the caramel:
- Place the sugar over heat until it melts, then add a very small cup of water and a piece of butter.
- Stir the sugar until it reaches the desired golden color.
- Arrange the pineapple pieces in the pan and pour the caramelized sugar over them. When the caramel sets over the pineapple pieces, pour the cake batter on top.
- Place the cake pan in a preheated oven at 180°C on the middle rack for 30 to 40 minutes, depending on your oven.
- When removing the cake from the oven, leave it in the turned‑off oven for about 10 minutes before inverting it.
