Peach Jam
Have you ever made any kind of jam before? Jam is a smart way to preserve fruit and enjoy it beyond its season. Peach jam is one of the most delicious ways to do this!
Peach Jam:
Ingredients

- Fresh peaches
- Syrup: One cup sugar will require one cup water
- Orange blossom water or a dash of vanilla
- Mastic (optional)
- 1 tablespoon lemon juice
- Amount of syrup according to the amount of peaches you have or wish to prepare
Method

- Wash the peaches, peel them, and cut into crescents or wedges..
- It's best if the peaches are underripe so the fruit stays firm and intact.
- Boil the syrup for about 15 minutes and add a squeeze of lemon and any flavoring you have on hand, such as a leaf from the perfume herb (al-’attarāya) or orange blossom water or a dash of vanilla or mastic...Timers: 15 min
- When the syrup cools, place the peach pieces into airtight jars,
- and pour the syrup over the peaches. Seal the jars tightly and place them in a pot of water so that the jars are covered by about 5 centimeters of water.
- When the water boils, leave them for about 15 minutes and remove from heat.Timers: 15 min
- Remove the jars from the pot and invert them or place them with the lids facing down from day one until the next day to vent air.
- The next day, lay the jars on a level surface and seal them with tape to prevent air from entering completely.
- The jars will keep through the season in great condition, and you open the jar only when you want to enjoy peach jam.
