Ingredients

  • Long spaghetti pasta
  • Finely chopped onion
  • Grated carrot
  • Green bell pepper, cut into small cubes
  • Cooked or canned sweet corn kernels
  • Mozzarella cheese
  • Salt
  • Black pepper
  • Ground cinnamon (a light pinch)

Method

  1. Sauté the onion in a little oil until soft.
  2. Add the grated carrot, then the chopped pepper and corn, and stir a little until the vegetables begin to soften.
  3. Add previously cooked pasta (drained well) with a drizzle of oil and a pinch of salt.
  4. Season with salt and spices, mix everything together, then put the mixture in a glass baking dish (Pyrex) and sprinkle the cheese over the top.
  5. Bake under the grill until the cheese melts and browns lightly.
