Ingredients
- Long spaghetti pasta
- Finely chopped onion
- Grated carrot
- Green bell pepper, cut into small cubes
- Cooked or canned sweet corn kernels
- Mozzarella cheese
- Salt
- Black pepper
- Ground cinnamon (a light pinch)

Method
- Sauté the onion in a little oil until soft.
- Add the grated carrot, then the chopped pepper and corn, and stir a little until the vegetables begin to soften.
- Add previously cooked pasta (drained well) with a drizzle of oil and a pinch of salt.
- Season with salt and spices, mix everything together, then put the mixture in a glass baking dish (Pyrex) and sprinkle the cheese over the top.
- Bake under the grill until the cheese melts and browns lightly.
