How to make fried awamat with a tried‑and‑true home recipe!

Ingredients

  • 2 cups flour
  • 1 teaspoon baking powder
  • 2 small custard spoons custard powder
  • 1 tablespoon cornstarch
  • A pinch of salt
  • 1 cup yogurt
  • 1 cup warm water
  • 1 tablespoon yeast
  • 2 tablespoons sugar
  • After the time has passed, we re-stir the dough to remove the bubbles that will form.
  • We shape the awamat into rounds and fry them in plenty of hot oil.
  • We dip the hot fried awamat directly into cold, thick syrup (qatr or shireh).
  • How to prepare the syrup (qatr or shireh):
  • 2 cups sugar
  • 1 cup water
  • 1 teaspoon lemon juice
  • Orange blossom water and rose water to taste
  • We boil the water and sugar until the sugar is completely dissolved, then add the lemon juice and orange blossom and rose water to taste.

Method

  1. First, dissolve the yeast in a cup of warm water.
  2. Mix all dry ingredients first, then add the water and yeast, mixing well until you obtain a soft, elastic dough that sticks to the hand.
  3. Let the awamat dough rest to rise for about two hours.
  4. After the time has passed, stir the dough again to release any bubbles.
  5. Shape the awamat into circles and fry them in hot, abundant oil.
  6. Fry the awamat first over low heat, remove them, then fry again in the same hot oil to ensure the interior is fully cooked.
  7. Dip the hot fried awamat immediately in cold, thick syrup.
