How to make fried awamat with a tried‑and‑true home recipe!
Ingredients
- 2 cups flour
- 1 teaspoon baking powder
- 2 small custard spoons custard powder
- 1 tablespoon cornstarch
- A pinch of salt
- 1 cup yogurt
- 1 cup warm water
- 1 tablespoon yeast
- 2 tablespoons sugar
- After the time has passed, we re-stir the dough to remove the bubbles that will form.
- We shape the awamat into rounds and fry them in plenty of hot oil.
- We dip the hot fried awamat directly into cold, thick syrup (qatr or shireh).
- How to prepare the syrup (qatr or shireh):
- 2 cups sugar
- 1 cup water
- 1 teaspoon lemon juice
- Orange blossom water and rose water to taste
- We boil the water and sugar until the sugar is completely dissolved, then add the lemon juice and orange blossom and rose water to taste.
Method
- First, dissolve the yeast in a cup of warm water.
- Mix all dry ingredients first, then add the water and yeast, mixing well until you obtain a soft, elastic dough that sticks to the hand.
- Let the awamat dough rest to rise for about two hours.
- After the time has passed, stir the dough again to release any bubbles.
- Shape the awamat into circles and fry them in hot, abundant oil.
- Fry the awamat first over low heat, remove them, then fry again in the same hot oil to ensure the interior is fully cooked.
- Dip the hot fried awamat immediately in cold, thick syrup.
