Oatmeal cookies — a healthy and tasty recipe :)

Ingredients

  • 1/2 cup coconut oil or butter
  • 1/2 cup brown or white sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup all-purpose flour
  • 1 1/4 cups rolled oats
  • 1 tsp baking soda
  • 1/2 cup dried cranberries or any dried fruit
  • 1/2 cup white or dark chocolate chips
  • 1/4 cup chopped walnuts - optional

Method

  1. Add the coconut oil and sugar and whisk them with an electric mixer
  2. Add the egg and whisk it as well
  3. In another bowl, combine the flour, oats, and baking soda, then add the flour mixture to the egg mixture
  4. Add the dried fruit and beat them briefly with the electric whisk until combined
  5. Then add the chocolate chips and walnuts and stir with a wooden spoon
  6. Chill the oatmeal cookie dough in the refrigerator for about twenty minutes
  7. After the time has passed, shape the dough into rounds, place them on a baking tray lined with parchment paper, and press them slightly
  8. Place the tray in a preheated oven at 180°C for about ten minutes
  9. Allow the oatmeal cookies to cool to room temperature, then serve
