Ingredients

  • 2 cups plus 1/3 cup flour
  • 1 cup sugar
  • 1/3 cup chopped walnuts
  • 1/2 cup vegetable oil
  • 1/2 cup yogurt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • A pinch of salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 1/4 cups peeled, diced apple
  • 3 eggs
  • For the muffin topping:
  • 1/2 cup soft butter
  • 1/2 cup coarse brown sugar
  • Caramel sauce:
  • 2 cups milk
  • 1 cup granulated sugar
  • A dash of vanilla

Method

  1. Beat the eggs with the vanilla and sugar well.
  2. Add the oil, then add all the dry ingredients and beat well with an electric mixer.
  3. Mix the yogurt with the baking soda and, when it foams, add it to the batter.
  4. Turn off the mixer and fold in the apples and the toasted walnuts, dusted with a little flour.
  5. Spoon the muffin batter into cupcake liners.
  6. Mix the butter with the sugar by hand, then distribute the mixture over the top of the muffins.
  7. Place the muffin tins in a preheated oven and bake at 180°C for half an hour.
  8. To prepare the caramel sauce:
  9. Combine the milk with the sugar and baking soda in a pan over medium heat.
  10. Stir the mixture until the caramel turns brown.
  11. Add the vanilla and remove from the heat.
  12. Brush or dip the muffins in the caramel sauce while they are cold.
