Lentil and rice mudardara with onions, in a very tasty and easy recipe. One of the most practical and delicious vegetarian dishes for the whole family!

Ingredients

  • 3 cups medium-wide green lentils
  • 1 cup Egyptian rice
  • 5 onions, sliced
  • 1/2 cup vegetable oil + olive oil
  • Salt
  • A pinch of black pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon seven-spice blend

Method

  1. Wash the lentils, drain them, and put them in a pot with about 7 cups of water.
  2. When the lentils boil, reduce the heat and let them cook only half-way, not fully.
  3. Add the rice after washing it and soaking it for 15 minutes in hot water.
    Timers: 15 min
  4. When the rice is cooked, drain everything in a colander.
  5. In the same pot, add half the amount of oil and fry a finely chopped onion, adding all the spices and salt.
  6. When the onion browns slightly, add the lentils with the rice and fold with a fork so the lentils and rice absorb all the flavors.
  7. Reduce the heat, cover the pot, and leave them for 10 minutes, then turn off the heat.
    Timers: 10 min
  8. Add the remaining oil and fry the onions over low heat with a pinch of salt.
  9. Serve the lentil mudardara with rice alongside yogurt and any salad of your choice...
