- 1 cup sugar
- 1 cup vegetable oil
- 1 cup cashew milk or regular milk or water
- 4½ cups flour or 5 cups depending on the dough's needs
- 1 tablespoon baking powder
- 1 tablespoon ground fennel
- 1 tablespoon whole anise seeds
- For the filling:
- Half a kilo dates
- 2 tablespoons vegetable oil
- 1 tablespoon orange blossom water
- 1 tablespoon rose water
- 1/2 cup ground walnuts
- A pinch of ground cinnamon
- Sesame seeds for garnish
- Cut the maqrouta or date cookies to the size you want and place the maqrouta tray in the preheated oven at 180°C for about 12 minutes or until the cookies brown and the dough is cooked; do not leave the maqrouta in the oven too long so they

- Mix the sugar, milk, and oil well, then gradually add the flour and baking powder...
- Knead the ingredients well until you obtain a smooth dough. Roll it into a rectangle, fill it with dates and walnuts as shown in the accompanying photos, then roll it and garnish with sesame
- Cut the maqrouta or date cookies to the size you want and place the maqrouta tray in the preheated oven at 180°C for about 12 minutes or until the cookies brown and the dough is cooked; do not leave the maqrouta in the oven too long so they do not become hard
