Maqluba with Vegetables and Ground Beef
A delicious, easy-to-make vegetable maqluba layered with coarse ground beef. Distinctive presentation — serve with yogurt and salad. Can be made without meat.
Maqluba with vegetables and ground beef — a rich, flavorful dish
Ingredients
Start here, then move straight into the method.
- 1 large eggplant
- Potatoes
- Cauliflower (or cauliflower florets)
- 4 cups rice
- Vegetable oil
- Salt
- Cinnamon
- Spice mix (black pepper and meat spice)
- 500 g coarse ground meat
- 3 onions (1 finely chopped for cooking, 2 sliced into rings)
- 4 tomatoes (2 finely chopped, 2 sliced into rounds)
- Small can of tomato paste (or about 2 tbsp)

Method
Follow the cooking sequence without leaving the page.
- First... cut the eggplant into thick rounds or lengthwise, wash it with water, sprinkle salt on it, and set it aside so the moisture drains out...
- Fry the eggplant in plenty of hot oil and set it aside to drain or place it on kitchen paper
- ...Cut the potatoes into rounds and fry them in oil, and do the same with the cauliflower
- Wash four cups of rice and soak it in lukewarm water for a while... then drain the soaked rice
- Place a pot on the heat with the amount of water needed for the rice, add two tablespoons of vegetable oil, then add the rice with a pinch of salt and some cinnamon
- When the top of the rice begins to dry from the water, turn off the heat and set it aside... at this stage the rice is not fully cooked yet
- In the second stage... prepare coarse ground meat. Put a pot on the heat with two tablespoons of oil and a finely chopped onion, add the ground meat, a pinch of black pepper, meat spices, a pinch of salt, two finely chopped tomatoes, and a can of tomato paste, and sauté until cooked
- In the third stage... prepare a pot, add two tablespoons of oil and place rings of onion, tomato, and hot pepper; arrange the fried eggplant, potatoes, and cauliflower on top of them, then add the meat and finally add the rice
- Cover the pot and leave the maqluba with vegetables and coarse ground meat — an easy, delicious, and visually distinctive recipe. It can be served with yogurt and salad, and can also be made without meat. Cook on low heat for half an hour.

- Invert the maqluba pot onto a serving plate larger than the pot
