Madeleine cakes — a simple recipe and a delightful treat!
Ingredients
- 2 eggs
- 1 cup flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 cup melted butter
- 1 tsp lemon zest
- 1 tsp vanilla
- Melted butter to grease the madeleine pan

Method
- Brush the Madeleine mold with melted butter using a pastry brush, then refrigerate the mold for 10 minutes.Timers: 10 min
- In a bowl whip the butter until creamy, then add the sugar, vanilla and lemon zest and beat well.
- Add the eggs one at a time, beating after each addition.
- Sift the flour and baking powder together in another bowl, then add them to the egg mixture and fold gently with a spoon.
- Spoon the batter into the molds.
- Bake the madeleine molds in a preheated oven at 170°C for 8 minutes.Timers: 8 min
- Let the madeleines cool at room temperature before serving.
- They can be dusted with powdered sugar when serving.
