Maamoul Mad with ashta is one of the most delicious Arabic desserts. Here is this easy and reliable method for making it.

Ingredients

  • The dough:
  • 1 1/2 cups flour
  • 3 cups semolina
  • 1/2 cup sugar
  • 1 cup butter
  • 1/2 cup ghee
  • 1 teaspoon mahlab
  • 1 teaspoon yeast
  • A pinch of salt
  • 1/4 cup rose water
  • 1/4 cup orange blossom water
  • The ashta filling:
  • 2 cups powdered milk
  • 1/2 cup flour
  • 5 cups water
  • 1/4 block butter, about 50 g
  • 1 ready-made plain qashtah cream container
  • Method for the ashta filling:

Method

  1. Mix all the dough ingredients except the rose water and orange blossom water, and let it rest for 1 hour.
    Timers: 60 min
  2. After 1 hour, add the 1/4 cup rose water and 1/4 cup orange blossom water, stir, and let it rest for another hour.
    Timers: 60 min
  3. After the resting time, divide the dough mixture into two parts. Line a baking tray with aluminum foil, spread out the first part evenly, and lift it onto the foil. Set aside.
  4. Spread the other part of the dough in the tray, distribute the filling over it, then turn the layer you set aside on the aluminum foil over the filling.
  5. Place the tray in the oven on the middle rack over medium heat.
  6. When the edges are browned and it is cooked through, remove it from the oven.
  7. Immediately pour cold syrup over it while it is still hot.
  8. Let it cool completely at room temperature before cutting and serving.
  9. Mix all the ingredients except the butter and qashtah, then place them in a pot over the heat until they boil and the mixture thickens.
  10. Add the butter and the container of qashtah and stir until the butter melts, then turn off the heat.
  11. Let it cool before using.
