Ingredients
- Half a kilo of lobiya
- 4 tomatoes
- 2 dry onions
- 1 head of garlic
- 1 hot pepper
- 1/4 cup olive oil
- Salt to taste
Method
- Peel the garlic and finely mince it, and do the same with the onion. Put them in the pot with the olive oil while still cold, then turn on the heat and stir until softened.
- Trim the ends of the lobiya pods and wash them well. You can also cut them if the pods are long.
- Add the washed and drained lobiya to the sautéed garlic and onion and stir until it softens well.
- Add the finely chopped tomatoes, salt, and the hot pepper, then stir. Cover and let it cook over low heat until the lobiya bi zayt is well cooked.
- Serve immediately with fluffy rice, or leave to cool and eat with bread.
