Layali Lubnan (Lebanese Nights Dessert)
Layali Lubnan, or Lebanese Nights, is an easy and delicious dessert featuring two layers of cream – one cooked and one fresh. It's garnished with pistachios and served with a sweet syrup.

Ingredients

- 1 cup semolina
- 1 liter milk
- 1/4 cup liquid cream
- A dash of rose water or orange blossom water
- 1/2 teaspoon ground mastic
- 1 can qashta (clotted cream) or kaymar
- Pistachios for garnish

- 1 1/2 cups sugar

Method
Follow the cooking sequence without leaving the page.
- Add the semolina to the milk and liquid cream and place them in a saucepan over the heat
- Continue stirring to prevent the semolina from sticking to the bottom of the pan
- After a short while add the ground mastic and continue stirring until the mixture thickens and comes to a boil
- When the mixture has thickened to the desired consistency, add rose water or orange blossom water and turn off the heat immediately
- Pour the hot mixture into a Pyrex (a glass baking dish) or into serving glasses
- After the mixture cools to room temperature, add a layer of clotted cream (ashta) on top, then place it in the refrigerator to chill
- At serving time, garnish with shelled pistachios
- Serve Layali Lubnan with syrup (attar or simple syrup)
- How to make the syrup:
- Dissolve the sugar in the water and place them in a saucepan over the heat until they boil
- After boiling, reduce the heat and add the lemon juice
- Let the syrup simmer over low heat for no more than ten minutes, then set it aside to cool
