Method

Follow the cooking sequence without leaving the page.

  1. Add the semolina to the milk and liquid cream and place them in a saucepan over the heat
  2. Continue stirring to prevent the semolina from sticking to the bottom of the pan
  3. After a short while add the ground mastic and continue stirring until the mixture thickens and comes to a boil
  4. When the mixture has thickened to the desired consistency, add rose water or orange blossom water and turn off the heat immediately
  5. Pour the hot mixture into a Pyrex (a glass baking dish) or into serving glasses
  6. After the mixture cools to room temperature, add a layer of clotted cream (ashta) on top, then place it in the refrigerator to chill
  7. At serving time, garnish with shelled pistachios
  8. Serve Layali Lubnan with syrup (attar or simple syrup)
  9. How to make the syrup:
  10. Dissolve the sugar in the water and place them in a saucepan over the heat until they boil
  11. After boiling, reduce the heat and add the lemon juice
  12. Let the syrup simmer over low heat for no more than ten minutes, then set it aside to cool
