Ingredients
- 8 slices sandwich bread (toast)
- 2 tbsp sugar
- 50 g butter
- Additional butter for the pan
- 100 g mozzarella cheese
- Crushed pistachios for garnish
- Sugar syrup (qatra / shireh) for serving

Method
- Grind the toast slices in an electric grinder, then add the sugar and room-temperature butter and grind.
- Grease a wide nonstick pan or baking dish with a little butter, spread the toast dough over it and press while spreading to make an even layer.
- Sprinkle the mozzarella over the top of the dough.
- Light the stove on low heat and start turning the pan occasionally until the dough browns on all sides and the cheese melts; this will take about 15 minutes.Timers: 15 min
- When the disk begins to slide and the cheese is completely melted, it means it’s ready.
- Turn off the heat and leave the toast bread and mozzarella knafeh in the pan for a few minutes to rest and settle, then invert it onto a serving plate larger than the pan.
- Garnish the toast bread and mozzarella knafeh with pistachios and serve immediately with syrup (qatra).
