Ingredients
- khubeiza (mallow greens)
- a bunch of fennel
- 1 large leek, chopped
- olive oil
- 1 tablespoon hot pepper or chili paste (optional)
- salt
- 1 large onion, chopped
- 1/2 cup coarse bulgur (or more, depending on the amount of khubeiza)

Method
- Wash the khubeiza well after chopping and leave it to drain.. do the same with the other vegetables
- In a pot or large saucepan, put the olive oil and add the onions and leeks and sauté until they brown
- Add the khubeiza, coarse bulgur and hot pepper and stir until the water evaporates and the khubeiza wilts
- Serve the khubeiza immediately or let it cool.. and serve it with bread
