Kabuli Rice (Kabli Rice)
Kabli (Kabuli) Rice is a well-known dish in Saudi cuisine, alongside dishes like Machboos and Kabsa. This healthy variation skips heavy meats and fats.
Ingredients

- Half a kilo of beef, cut as you like (chunks or long strips)
- One large onion, chopped
- An orange
- One tablespoon of tomato paste
- Three potatoes, peeled and cubed
- One cup of Basmati rice
- One tablespoon of rose water
- One tablespoon of vegetable oil
- One teaspoon of saffron or a saffron thread, depending on availability
- Spice mix: A pinch of cinnamon, allspice, salt, and ground cardamom
Method
Follow the cooking sequence without leaving the page.
- Start by frying the chopped onion until it turns golden, then add the meat and the spice mix.
- Peel the orange and juice it. Finely grate part of the orange zest and add the zest and orange juice to the meat and onion. Wait a few minutes, then also add rose water and tomato paste.
- Wait a bit longer, then add the potato cubes and let the ingredients simmer over medium heat.
- In a separate pot, boil the basmati rice. When it is cooked, add saffron or the saffron thread (one or the other, not both, depending on what you have). Note that saffron or the saffron thread should be dissolved in a tablespoon of rose water before adding to the rice.
- In a wide serving dish, spoon the rice that has taken on a lovely color from the saffron, then scatter the meat and onion mixture over it, and garnish with nuts as desired.
