- 1 kilo flour
- A pinch of salt
- 4 tablespoons sugar
- 3 tablespoons yeast
- 4 tablespoons powdered milk
- 1 teaspoon finely ground mahleb1 tablespoon ghee
- 1 teaspoon baking powder
- 5 tablespoons bran
- Lukewarm water, as needed for the dough
Method
- Knead all the ingredients above except the bran in the traditional way, then cut the dough into circles and arrange them in a bowl. Cover and let rise for half an hour...
- After the required time, sprinkle on bran and peeled sesame seeds... Wet your hands with water and moisten the dough, then sprinkle the surface with some of the bran mixture and roll it out with a rolling pin over the bran and peeled sesame seeds. Cut it with a cup, place the pieces on a baking tray, and leave them for one hour to rise again...
- Then preheat the oven well to 250°C and place the tray on the bottom of the oven. When they puff up, flip them so the top browns lightly
