  • Dried molokhia
  • Chicken breasts or a whole chicken, as desired
  • Vegetable oil
  • Bunch of fresh coriander (cilantro)
  • 1 tablespoon dried coriander
  • 7 cloves garlic or more, to taste
  • Dried onion
  • 5 whole cloves of garlic, uncrushed
  • Juice of 4 lemons
  • Hot pepper or chili, to taste
  • Salt
  • 1 tablespoon butter, optional

Method

  1. First, clean the dried molokhia leaves and remove any impurities. Pour boiling water over them and leave them soaked for about an hour.
  2. After that, squeeze the molokhia leaves well by hand, then pour boiling water over them again; repeat this process several times until the washing water runs clear.
  3. Squeeze the molokhia leaves well and fry them in vegetable oil for a few minutes, then set aside.
  4. Wash the chicken well, rub it with salt and vinegar, and boil it until cooked...
  5. Pour the chicken cooking liquid over the fried molokhia leaves and let the mixture boil over medium heat.
  6. Sauté the chopped fresh coriander with crushed garlic and the dried coriander, and add them to the molokhia...
  7. Squeeze the lemons and gradually add the lemon juice to the molokhia. You can also add a few small dried onions and whole garlic cloves. Let the molokhia simmer for about 5 minutes after adding the lemon juice. Finally, add hot pepper or chili to taste and the boneless pieces of chicken.

  8. Let the mixture simmer over low heat for some time, add salt, and optionally stir in the butter if desired.
  9. Serve the molokhia alongside cooked white rice
