Chicken and cracked red lentil soup is one of the most delicious soups you can make! So, so, so tasty — and the best part is that it’s very easy :)
Ingredients
- 2 pieces chicken, bone-in or boneless
- 1 cup red split lentils
- 2 onions
- 4 cloves garlic, minced
- 2 carrots
- 1 tablespoon tomato paste
- Salt + black pepper
- 1 teaspoon turmeric
- 1 tablespoon ground cumin
- 1 teaspoon paprika
- Water for boiling the chicken, with aromatics
- Olive oil

Method
- Wash the chicken pieces well and boil them in plenty of water with all the aromatics: peppercorns, bay leaf, cardamom pods, star anise, nutmeg and cinnamon sticks.
- Dice the onion and sauté it in a deep pot with 1 tablespoon of olive oil; add the crushed garlic.
- When the onion and garlic soften, add the spice mix of turmeric, salt, black pepper, paprika and cumin.
- Stir well until the onion absorbs the flavor of the spices.
- Add the washed lentils and the carrots cut as desired, either slices or cubes.
- Mix well then add the tomato paste and the chicken cooking liquid and let the mixture boil until the lentils and carrots are cooked.
- Meanwhile remove the chicken from the bones, chop it and add it to the lentil soup.
