Ingredients
- tomatoes
- 3 yellow onions
- 2 cloves garlic
- 2 large zucchini, cut into cubes
- 2 potatoes, cut into cubes
- 4 tomatoes, finely chopped
- 2 tablespoons tomato paste
- 1 cup water
- salt
- 1 teaspoon hot pepper paste
- 1 medium tablespoon paprika

Method
- Finely chop the onion and garlic and sauté them in a little vegetable oil until softened.
- Add the diced zucchini, potatoes, and tomatoes and stir until the vegetables soften.
- Add the tomato paste or sauce, water, salt, spices, and pepper paste; stir, then let the mixture simmer over low heat until the vegetables are fully cooked and the sauce thickens.
- Serve the zucchini in tomato sauce immediately, or let it cool to room temperature and refrigerate to serve later; eat it with Arabic bread.
