Zucchini in tomato sauce .. one of the famous traditional Lebanese rural recipes .. a very delicious vegetarian dish, especially if it is served cold

Ingredients:

tomatoes

3 yellow onions

2 cloves garlic

2 large zucchini, cut into cubes

2 potatoes, cut into cubes

4 tomatoes, finely chopped

2 tablespoons tomato paste

1 cup water

salt

1 teaspoon hot pepper paste

1 medium tablespoon paprika

Method:

Finely chop the onion and garlic and sauté them in a little vegetable oil until softened
Add the cubed zucchini, potatoes, and tomatoes and stir until the vegetables soften
Add the tomato paste or sauce, water, salt, spices, and hot pepper paste and stir. Then let them simmer over low heat until they are fully cooked and the sauce thickens
Serve the zucchini in tomato sauce immediately, or let it cool to room temperature and serve chilled from the fridge. It is eaten with Arabic bread
