How to Make Walnut Maldoouqa
We’re used to seeing and making pistachio maldoouqa, but this wonderful and distinctive recipe is walnut maldoouqa! It’s easy, very delicious, and looks beautiful.

- 3 cups water
- 1 1/2 cups fine semolina
- 1/2 cup unsalted butter
- 2 cups chopped walnuts

Method
- Toast 1 1/2 cups sugar over the heat until it turns golden. It’s best not to over-caramelize the sugar so it doesn’t become bitter.
- Add 3 cups of water. The sugar will harden, then gradually dissolve with the heat. Once it has completely dissolved, add 1 1/2 cups fine semolina and stir, then add a small block of butter, about a small tea cup’s worth, and keep the mixture on the heat for about 5 minutes until the semolina is cooked.Timers: 5 min
- Then finally add the 2 cups of walnuts.
- Remove the mixture from the heat and pour it into a serving dish, then place it in the refrigerator.
- When the maldoouqa mixture has cooled, spread it in the serving dish and top it with ashta cream, then garnish with pistachios, walnuts, or as desired.
- How to make the ashta cream
- 5 cups powdered milk
- 8 cups water
- A small cup of white vinegar
- When the milk starts to boil, lower the heat and add the cup of vinegar.
- Start separating the curds, place them in a strainer, and add a container of qaimar ashta cream with them.
- Serve with syrup or honey
