  • 8 egg whites
  • 8 egg yolks
  • Vanilla
  • 2 cups sugar
  • 1/2 cup water
  • 2 cups flour
  • 2 teaspoons baking powder
  • White milk mixture:
  • 4 cups milk
  • 1 cup heavy cream or kaymak
  • 1/3 cup sugar

  • 1 1/2 cups sugar
  • 4 tablespoons butter
  • 1 cup heavy cream

Method

  1. Beat the egg whites with the vanilla until you get a fluffy white mixture.
  2. In another bowl, beat the egg yolks with a pinch of vanilla and the sugar until creamy, then add the water, the sifted flour, and the baking powder and continue beating until you have a smooth mixture with no lumps.
  3. Gradually add the egg whites to the flour mixture, folding with a wooden spoon from the bottom up until both mixtures are fully combined.
  4. Grease a baking tray with butter and pour in the cake batter. Tap the tray several times on the counter to release any air from the cake, then place it in a preheated oven at 180°C for 30 minutes.

  5. When the cake is done and has dried, turn off the heat but leave the cake pan inside the oven for about 30 more minutes. Remove it and set it aside until the cake cools completely.
  6. Once the cake has cooled, make holes all over it on both sides. First on the top, then flip the cake and poke the other side.
  7. Pour the white milk mixture over the cake until it is fully absorbed. Then pour the previously prepared cold caramel mixture over the top. Finally, draw lines with a small wooden skewer.
  8. Serve trileçe tatlısı cold.
